MIT scientists report near doubling in shelf life of pak choi injected with melatonin

A new research study out of the U.S. and Singapore has shown to nearly double the shelf life of vegetables injected with biodegradable micro needles full of melatonin. Researchers, based out of the Massachusetts Institute of Technology (MIT) and the Singapore-MIT Alliance for Research and Technology, say that the shelf life of pak choi treated with their method and kept at room temperature was nearly doubled to eight days in their study. Inoculated veggies that were refrigerated stayed fresh for upwards of 10 days with much of it remaining ‘relatively green’ after 25 days. HortiDaily reports.
